Saray Mutfakları, the Palace Kitchens of Topkapı Palace, stand in Istanbul as an architectural glimpse into Ottoman court life. You would picture cooks, copper pots, spices and busy preparation areas serving the Sultan, his family and the wider court.

Several sections handled different kinds of food, from savoury dishes to sweets, while skilled ustas refined elaborate recipes. Baklava emerged here as a layered pastry filled with nuts and soaked in syrup. Its place in court culture reached beyond the table, since trays were ceremonially delivered to the Sultan’s Janissary soldiers during the Baklava Parade. State banquets also brought visiting dignitaries to tables where food displayed imperial wealth and power.

Magnificent plates used for those meals remain on display, linking the kitchens’ daily work with the splendour of Ottoman ceremonies.
