Eiskeller

Eiskeller stands near the northern entrance of Rombergpark Botanical Garden in Dortmund, as an architectural remnant of Schloss Brünninghausen. Its half-cylindrical structure preserves a garden-pavilion form from the early nineteenth century. Before modern refrigeration, the underground space kept food cold and supplied the estate brewery with winter ice. The eastern entrance remains an unusual architectural detail.

Workers sawed ice from nearby ponds, then compacted the blocks with salt for storage through the seasons. Straw insulated the blocks during transport and storage. The cooling supported brewing at the estate, because lager yeast required low temperatures during fermentation. Underground catacombs held beer barrels, with visible rail paths showing how storage once worked.

Preserved wine accounts and elegant champagne glasses connect the structure with the aristocratic entertainments of Schloss Brünninghausen. Rombergpark places that history beside questions about changing climate and its pace.
