Brotreform

Brotreform is a vegan wood-fired show bakery in Ulm, where natural ingredients and traditional craftsmanship shape the bread. Demeter standards guide the organic ingredients, while the visible baking process connects the finished loaves with the work behind them.

Founder Sven Jansky developed the idea during his business studies after changing direction from computer science to become a master baker. The bakery keeps its range deliberately small, avoids overproduction, and sells bread at local Ulm markets. Dough rests for at least twelve hours, with some loaves taking up to twenty hours before baking, while every product remains entirely vegan.

That long fermentation gives the bakery its clearest signature: a small selection of organic bread, made with time rather than shortcuts and baked in a wood-fired oven.
